olives grown at the right degree of ripeness undergo a special milling process;
they pass in a washing machine that after having defoliated the lava with running water.
The crushing of the olives and the kneading of the pasta takes place cold at a controlled temperature, in a sarcophagus of steel, hermetically sealed.
By injecting nitrogen, we create a vacuum environment where the polyphenols are volatile, do not oxidize and do not disperse when in contact with oxygen, therefore remaining in large quantities in the oil.
